Beef rolls with sage and cheese sauce

SERVES 4 PEOPLE
READY IN 15’

 

INGREDIENTS

14 thin sliced sirloin steaks

4 sottilette (cheese slices), sliced into strips

14 sage leaves

Salt and pepper to taste

All-purpose flour to taste

 

3 tablespoons extra virgin olive oil

1 teaspoon onion, chopped

 

¼ cup white wine, dry

½ cup cold water + 1 teaspoon all-purpose flour (mixed together)

1 tablespoon vegetable stock cube

 

 

STEP 1: PREPARE THE ROLLS
Lay the rolls flat, then in the centre of each, place a strip of cheese and a sage leaf.

Add salt and pepper to taste, roll up slices (not very tightly if you want a creamy recipe!) and secure with toothpicks. Flour each roll with a bit of all-purpose flour.

 

STEP 2: SAUTÈ

Place 3 tablespoons extra virgin olive oil and 1 teaspoon onion (chopped) into the pan. Let them sauté for a few minutes.

 

STEP 3: COOK

Add the rolls and let them brown blending with a spoon. Simmer with white wine until reduced, then cook them on low heat.

Add the mixture of water and flour and cook for 8-10 minutes, adding a spoon of vegetable stock cube. When the sauce gets thick they’re ready!
