Light aubergine parmigiana

INGREDIENTS

1 aubergine

1 mozzarella

1 tomato

 

Extra virgin olive oil to taste

Salt to taste

 

2/3 basil leaves

 

 

STEP 1: SLICE THE INGREDIENTS

Slice the aubergine, the mozzarella and the tomato.

 

STEP 2: GRIDDLE THE AUBERGINE

Heat a griddle pan, add 1 tablespoon extra virgin olive oil and griddle the aubergine, adding salt to taste.

 

STEP 3: COMBINE THE INGREDIENTS

Place in the centre of the dish the tomato, aubergine and mozzarella slices all piled on top of each other. Place at the top the basil cut it into little strips and sprinkle with oil.
