Stuffed calamari

I have been trying for such a long time but finally I get it! If you want to cook tasty stuffed calamari I’ve the recipe for you, of course without garlic!

 

SERVES 2 PEOPLE
READY IN 45’

 

INGREDIENTS

2 calamari

 

1 tablespoon onion, carrot and celery, chopped

2 tablespoons extra virgin olive oil

¼ glass white wine, dry

Salt and chopped parsley to taste

2-3 tablespoons hot water

 

3 tablespoons breadcrumbs

1 egg

2 tablespoons Parmesan cheese

 

1 teaspoon onion, chopped

2 tablespoons extra virgin olive oil

¼ glass white wine, dry

tomato flesh

Salt to taste

 

 

STEP 1: CUT CALAMARI

Cut only calamari tentacles and wings into pieces.

 

STEP 2: COOK TENTACLES

Place onion, carrot and celery in a pan with oil and let sautè. Add calamari pieces and cook for 1 minute. Simmer with white wine until reduced then add salt and parsley and cook for 10 minutes adding 2-3-tablespoons hot water.

 

STEP 3: MAKE THE FILLING

Pace the cooked calamari in a bowl and mix them with: breadcrumbs, egg and Parmesan cheese.

 

STEP 4:  STUFF THE CALAMARI

Fill the calamari 3/4 full, then close them with a toothpick.

 

STEP 5: COOK

Place onion and oil in a pan and let sauté for a minute. Add stuffed calamari, then simmer with white wine until reduced. Now add tomato and water and cook for 30 minutes in medium-high heat. 10 minutes befor turning off add salt.
