Cream, ham and peas tagliatelle pasta

One of my sweetest childhood memory, this recipe is a must in every Italian family because it’s easy, quick and beloved by children. I know that’s not a chef’s idea but you know that I love simplicity.

 

SERVES 4 PEOPLE
READY IN  50’

 

INGREDIENTS

2 cups all-purpose flour

3 eggs

All-purpose flour and durum wheat flour to taste

 

1 cup fresh peas

Water and coarse salt to taste

1 teaspoon onion, chopped

2 tablespoons extra virgin olive oil

4 slices ham

 

2-3 US quart water

1 tablespoon coarse salt

 

3 tablespoons cream

1 tablespoon Parmesan cheese

Pepper to taste

 

 

STEP 1: MAKE FRESH PASTA

STEP 2: MAKE THE SAUCE

Boil peas in hot salted water for 3-4 minutes, and then drain them.

Sautè onion in oil in a pan (for about 30 seconds), then add sliced ham. Let the ingredients brown for 1 minute.

 

STEP 3: COOK TAGLIATELLE

Cook tagliatelle in salted boiling water for 4-5 minutes, then drain them.

 

STEP 4: ADD THE SAUCE

Place cooked tagliatelle into the sauce pan and mix adding cream, Parmesan cheese and pepper to taste.

To make them creamy add a ladle cooking water!
