Aubergine and marjoram fritters

It’s time for (delicious) aubergines! Ideal for a vegetarian snack: soft and marjoram-flavored.

How  you can’t eat just one?

INGREDIENTS

1 aubergine

2 tablespoons extra virgin olive oil

1 pinch salt

 

5  tablespoons bread, chopped

2 eggs

3 tablespoons Parmesan cheese

3 tablespoons breadcrumbs

2 tablespoons all-purpose flour

1 teaspoon fresh marjoram, minced

Salt and pepper to taste

 

Frying oil to taste

 

 

 

STEP 1: COOK THE AUBERGINE

Cube the aubergine and cook it in a non-stick pan with oil and a pinch salt unitl it gets soft. It takes ab. 15 minutes  and it’s better if you cover the pan with a lid.

 

STEP 2: MILL THE AUBERGINE

Mill the cooked aubergine with a vegetable mill.

 

STEP 3: ADD THE REMAINING INGREDIENTS

Add to the aubergine: chopped bread,  2 eggs, 3 tablespoons Parmesan cheese, 3 tablespoons breadcrumbs, 2 tablespoons all-purpose flour, 1 teaspoon fresh marjoram, salt and pepper to taste.

 

STEP 4: FRY

Dip a spoonfuls of mixture into hot oil and cook for two minutes on both sides. When ready drain the bites and place them on kitchen paper.
