Stewed bell peppers (Italian peperonata)

I know, it’s not a seasonal recipe .. But if bell peppers look at me with melancholy from their box at the supermarket what should I do? How can I not buy them!? It’s basically human pity! This is my creative apology to suggest you a delicious mom recipe! A very nice preparation!

 

SERVES 4 PEOPLE
READY IN 45’

 

INGREDIENTS:

4 bell peppers

 

3 tablespoons extra virgin olive oil

1/2 sliced ​​onion

 

2-3 ripe tomatoes

3 basil leaves

Vegetable powder to taste

1 glass hot water

 

 

STEP 1: CLEAN THE PEPPERS

Wash the peppers, cut them to remove the seeds and slice into large pieces.

 

STEP 2: BROWN THE ONION

Put oil and onion in a non-stick pan and light the fire. Cook for a minute, then add the peppers and cook for a couple of minutes.

 

STEP 3: ADD TOMATO

Now add chopped tomatoes, basil leaves and vegetable stock powder. Stir carefully and then add the water cooking  peperonata over medium heat for about 35 minutes.
