Bacon and spinach savory plumcake

A smart idea to take a good and healthy lunch to work.

You don’t need trendy lunchboxes or hyper-technological food warmers, but just a plastic bag to contain this soft delicacy.

A complete meal where spinach and bacon are mixed to carbohydrate gratification: , today we’re having  the savory plumcake!

 

MAKES 1 PLUMCAKE
READY IN 1h

 

INGREDIENTI

3-4 spinach cubes, frozen

water and coarse salt to taste

 

2 eggs

1 cup milk

1/4 cup extra virgin olive oil

7 oz all-purpose flour + 1 teaspoon instant dry yeast

2 pinch salt

3 tablespoons bacon, cubed

 

Butter and all-purpose flout to taste

 

 

STEP 1: BOIL THE SPINACH

Boil spinach in hot salted water for 10 minutes, then drain them.

 

STEP 2: MAKE THE MIXTURE

In a bowl beat eggs with milk and oil. Add, little by little, all-purpose floutr + yeast and salt. Finally add spinach and cubed bacon.

   

 

STEP 3: INTO THE LOAF PAN

Grease and flour a loaf pan. Now fill it with the mixture.

 

STEP 4: COOK

Cook the plumcake in preheated oven at 180°C for 40 minutes.
