Fugassìn (potato scones)

You might be at the end of the world, but the moment you taste a bite, this scones immediately brings you back home … a fluffy home!

That’s what happens to me!

Fugassìn are just  fried cloud bites made of potatoes, typical of Liguria (my mother’s land).

Together with the best-known Genovese focaccia, they are one of the most delicious street food you can eat in Italy!

INGREDIENTS:

21oz potatoes with peel

water to taste

 

1 cube of brewer’s yeast

½ glass of warm water

1 little teaspoon of sugar

17,5 oz flour 0

2 pinches of salt

 

frying oil to taste

 

 

 

STEP 1: BOIL THE POTATOES

Fill a pot with water, add washed potatoes (not peeled) and cook for about 15 minutes.

Once cooked, peel and mash them with the potato masher.

 

STEP 2: MAKE THE DOUGH

Add  yeast dissolved in half a glass of water, sugar, flour and two pinches of salt.

Knead by hand to get a nice dough.

Cover the dough with a kitchen towel and let it rise at room temperature for 5-7 hours.

 

STEP 3: PORTION AND COOK

When the leavening is complete, the dough will look like this:

With a knife cut irregular strips

and dip them in deep, hot oil until golden brown on all sides.
