Hot milk cake

What a discovery!

Hot milk cake was a real surprise for me, I didn’t think adding boiling milk to a cake dough would work!

I confess, I was very very skeptical about the success of this recipe, but when I tried it for the first time I’ve immediately changed my mind.

It’s similar to sponge cake, but tastier ‘cause no needs a filling and releases an intense lemon scent.

Take a chance on it, it’s worth it!

 

SERVES 6 PEOPLE
READY IN 45’

 

INGREDIENTS:

4 eggs

6 oz sugar

1 pinch salt

 

7 oz all-purpose  flour + 1 teaspoon baking powder

 

1 cup milk

2,5 oz  butter

 

1 lemon zest, minced

 

 

STEP 1: BEAT THE EGGS

Whip the eggs together with sugar and salt with electric whisk until frothy (it will take 8-10 minute).

  

 

STEP 2: ADD DRY INGREDIENTS

Add  flour + baking powder little by little, continuing whipping with the whisk.

 

 

STEP 3: MAKE  HOT MILK

Heat the milk in a saucepan and melt butter in it.

 

When hot, pour it in a bowl and add 2 spoonfuls of the cake dough previously prepared on step 2.

Mix carefully.

 

STEP 4: COMBINE

Add the hot milk mixture  to the dough bowl. Add lemon zest too and mix with a wooden spoon from the bottom up.

 

STEP 5: COOK

Grease a cake pan and sprinkle with flour. Pour the cake dough and bake in a preheated oven at 180 ° C for 25 minutes on the lowest shelf of the oven, then move the cake to the central shelf and cook 10 more minutes.
