Tomato confit

MAKES 1 SMALL JAR
READY IN 3h 10’ (3h it’s cooking time!)

 

INGREDIENTS

1 lb cherry tomatoes

 

Salt, oregano, pepper, sugar, extra virgin olive oil to taste

 

 

STEP 1: CUT THE TOMATOES

Cut cherry tomatoes in half and place them in a baking pan covered with baking paper.

 

STEP 2: SEASON

Season cherry tomatoes with salt, oregano, pepper, a little bit of sugar and extra virgin olive oil.

 

STEP 3: BAKE

Cook for 3 hours in preheated oven at 100 °C .

 

STEP 4: STORE

You can eat cherry tomatoes immediately or store them into the fridge inside a glass jar with extra virgin olive oil.

 

 

A PIECE OF ADVICE: they’re ideal with focaccia bread or even with pasta together with basil and mozzarella!
