Potato croquettes

SERVES 4 PEOPLE
READY IN 1h 3′ (20′ preparation, 40 + 3 ‘cooking)

 

INGREDIENTS

4 medium white (or red) potatoes

 

1 cup milk

2 tablespoons butter

1 pinch salt

 

1 egg

1 teaspoon all- purpose flour

1 tablespoon bread crumbs

2 tablespoons Parmesan cheese

salt, pepper and nutmeg to taste

 

1 cup all- purpose flour

2 eggs

1 cup breadcrumbs

 

frying oil to taste

 

 

STEP 1: COOK THE POTATOES

Put the potatoes in boiling salted water and cook for about 40 minutes. Then peel the potatoes and pass them through a food mill.

 

STEP 2: MAKE THE MASHED POTATOES

Put the mashed potatoes in a pot adding the milk, butter and salt. Cook over gentle heat until soft and creamy.

 

STEP 3: CREATE THE MIXING

When cold, add egg, flour, breadcrumbs, Parmesan cheese and salt, pepper and nutmeg to taste.

 

STEP 4: BREAD THE CROQUETTES

Place in 3 different dishes: 1 cup flour, 2 beaten eggs and 1 cup breadcrumbs. Take a little of mixture and shape it, then get it bready by passing it first into the flour, then into the eggs, and last into bread crumbs.

 

STEP 5: COOK THE CROQUETTES

Fry the croquettes in a pan with deep hot oil turning them several times until completely cooked (about 2-3 minutes).
