Grandma croquettes (with meat and rice)

Of humble birth (they’re made with leftover meat) but these soft and tasty croquettes are one of my best recipe!

INGREDIENTS

1 lb 8 oz mixed meat (chicken and beef)

1 carrot

1 onion

1 celery stick

Water to taste

 

2 potatoes

2 handfuls rice

 

1 egg

2 tablespoons Parmesan cheese

1 tablespoon breadcrumbs

Salt and pepper to taste

Milk/breadcrumbs if needed

 

2 tablespoons all-purpose flour

1 egg

1 cup breadcrumbs

 

Frying oil to taste

 

 

STEP 1: COOK MEAT

Place in a pressure cooker: meat, carrot, onion and celery. Cover with water, close with the lid and cook for about 25 minutes. Then remove meat from the pressure cooker, clean it (remove bones, skin and fat) and chop it finely.

 

STEP 2: COOK RICE AND POTATOES

Using the same pressure cooker, cook rice and potatoes (without skin) for about 8 minutes. Then drain them and mash them with a fork.

 

STEP 3: COMBINE THE INGREDIENTS

In a bowl mix together: meat, rice+ potatoes, egg, Parmesan cheese, breadcrumbs, salt and pepper. If the mixture is too dry add a tablespoon of milk, if it’s too soft add breadcrumbs.

 

STEP 4: BREAD THE CROQUETTES

Place in 3 different dishes: 2 tablespoons all-purpose flour, 1 beaten egg and 1 cup breadcrumbs. Take a little of mixture and make it round, then dip each croquette in the flour, then coat in the egg before dipping in the breadcrumbs.

 

STEP 5: COOK THE CROQUETTES

Fry the croquettes in a pan with deep hot oil turning them several times until completely cooked (about 4-5 minutes).
