Whole linguine pasta with Chicory sauce

A lot of people are afraid of carbs.. but not me! If you eat whole pasta with a vegetable sauce  you’ve nothing to worry about! Let’s prepare the recipe:

 

SERVES 4 PEOPLE
READY IN 20’

 

INGREDIENTS

1 teaspoon onion, chopped

3 tablespoons extra virgin olive oil

1 Radicchio (= chicory), chopped

¼ glass Teroldego (= red wine )

2-3 tablespoons hot water

Salt to taste

 

Water and coarse salt to taste

1 lb “whole linguine” pasta

 

3 tablespoons cream

2 tablespoons TrentinGrana cheese (well-aged cheese)

 

 

STEP 1: MAKE THE SAUCE

Place in a pan onion, oil and radicchio: let brown for a couple of minutes. Simmer with wine until reduced, then add water and salt carrying on cooking for 10 minutes.

 

STEP 2: COOK THE PASTA

In boiling salted water (the correct ratio provides 1 liter of water per pound of pasta and 12 g of salt per liter of water), cook linguine (read on the package the cooking time).

 

STEP 3: MIX PASTA AND SAUCE

Drain linguine pasta and mix it with radicchio sauce. Add cream and Trentingrana cheese. If necessary add some cooking water to get a creamier sauce.
