Chicory and bluecheese small focaccia

It’s summertime but sure  it’s not time for a diet! If you agree, I’ll show you how to make your family and friends happy with delicious chicory and bluecheese small focaccia!

 

MAKES 15 FOCACCIA
READY IN 3,5h

 

INGREDIENTI

10 oz lukewarm water + ½ oz brewer’s yeast

9 oz all-purpose flour

4 oz semolina

2 tablespoons potato flakes

2 tablespoons Parmesan cheese

2 pinches salt

2 tablespoons extra virgin olive oil
oil to taste for the oven tray

½ glass water+salt+oil

 

1 chicory ball

2 pinches salt

2 tablespoons oil

Bluecheese to taste

 

 

STEP 1: MAKE THE DOUGH

In a mixing bowl, blend: water +brewer’s yeast, then add – little by little – all-purpose flour, semolina, potato flakes, Parmesan, salt and oil.

 

STEP 2: LET IT RISE

Cover the dough  with cling film and let it stand at room temperature for a couple of hours.

 

STEP 3: ROLL OUT THE DOUGH

Put some flour and semolina on the pastry board, then place the dough on it and cover with a bit semolina . Roll the dough out carefully by hand (1-2 cm thick), and cut 15 circles.

Place the circles  in a oiled baking tray.

In a small bowl mix oil, water and salt, then sprinkle the small focaccia with it. Let them rise into the oven (off!) for about 1/2 hour.

 

STEP 4: FILL SMALL FOCACCIA

Slice the chicory and season with oil and salt. Place a teaspoon of it in the centre of each focaccia and add a teaspoon of bluecheese.

 

 

STEP 5: BAKE

Bake in preheated oven at 210 °C for about 15 minutes.
