Amatriciana pasta (Do you know bucatini?)

Do I get in trouble if I decided to cook a very iconic Italian recipe?  Actually I don’t know, but Guanciale is into the fridge and my family gets hungry!

And the result is : Bucatini all’Amtriciana, do you know it?

A hearty first course, with a greedy and rich bite, soooo rich. Hungry people: run to buy the ingredients and come and cook it!

 

SERVES4 PEOPLE
READY IN 20’

 

INGREDIENTS

1 tablespoon extra virgin olive oil

3,5 oz guanciale strips (similar to bacon)

chili to taste

 

¼ glass white wine, dry

 

1 cup mashed tomatoes

Salt to taste

 

11 oz “bucatini” pasta

water and coarse salt to taste

 

2-3 tablespoons Pecorino cheese

 

 

STEP 1: BROWN THE GUANCIALE

Place oil in a non-stick pan, light the fire, then add guanciale and chili pepper.

Brown for a couple of minutes.

 

STEP 2: ADD THE WINE

Simmer with wine until reduced.

 

STEP 3: ADD MASHED TOMATO

Drain the guanciale and put it aside, while in the cooking pan add mashed tomatoes.

Cook gently for about ten minutes, adding a pinch of salt.

 

STEP 4: COOK PASTA

Cook pasta in boiling salted water for the cooking time indicated on the package.

In the meantime add guanciale to the tomato sauce.

 

STEP 5: ADD THE SAUCE

Drain pasta and season with the tomato sauce, guanciale and adding a generous sprinkling of pecorino cheese.
