It’s my Bday black forest cherry cake!

My birthday tastes like chocolate mousse, whipped cream and cherries in syrup.

I promise: it’s not a difficult recipe, but it takes some times to be ready. Recommended for special days…

SERVES 6-8 PEOPLE

INGREDIENTS

4 eggs

4  1/2 oz sugar

3  1/2 oz all-purpose flour

2 oz potato starch

2 tablespoons cocoa powder

1 teaspoon baker’s yeast

butter and flour to taste

 

1/2 cup milk

1 tablespoon confectioner’s sugar

1 chocolate bar

7 oz whip cream

 

1 lb whip cream

1 tablespoon confectioner’s sugar

1 chocolate bar

 

½ glass water

2 tablespoons cherry syrup

 

1 cherries in syrup can

 

 

STEP 1: MAKE THE SPONGE CAKE

Using a beater, beat eggs and sugar until smooth (it takes about 10 minutes).

In another bowl, tent the flour, the potato starch, the cocoa powder and the yeast and add this mixture, little by little, to the first bowl using a wooden spoon.

Brush a baking tin with butter and flour, then place the cake mixture in it and cook in preheated oven at 180°C for 25 minutes.

 

STEP 2: MAKE THE 1ST FILLING: CHOCOLATE MOUSSE

Melt sugar in hot milk, then add chopped chocolate and mix well. Put aside.

In  another bowl, beat cream to make it whipped and then add it to the cold chocolate cream.

 

STEP 3: MAKE THE 2ND FILLING: CREAM AND CHOPPED CHOCOLATE

Beat cream and sugar until stiff; now divide it into two different bowls because one of them is for step 6 (put it into the fridge).

Chop chocolate and add half to the cream bowl (the remaining is for step 6).

 

STEP 4: WET THE SPONGE CAKE

In a glass combine water + cherry syrup.

Now divide the cake into three layers and brush the bottom with water + syrup.

 

STEP 5: FILL

Spread the chocolate mousse on the first sponge cake layer ( about 1- 1,5 cm thick) and deep some cherries in it.

Cover with the second sponge cake layer, brush it and cover again with whipped cream and chpped chocolate (1 – 1,5 cm thick).

Finally add the last cake layer.

 

STEP 6: DECORE

Spread the whipped cream (the one into the fridge) all over the cake, sprinkle with chopped chocolate and decore with cherries in syrup.
