Sausage stuffed chicken roll

A really soft meat recipe (chicken and sausages) that will make your children so happy! Ideal for important luncheons beacuse it’s reallt tasty and so practical! Everyone will fall in love with chicken roll!

INGREDIENTS

1 lb ground  meat (pork + beef)

2 sausages, chopped

1 egg

4 tablespoons Parmesan cheese

4 tablespoons breadcrumbs

1 teaspoon parsley, chopped

Salt, pepper, nutmeg to taste

 

1 chicken breast, big

all-purpose flour to taste

 

3 tablespoons extra virgin olive oil

1 tablespoon butter

2 tablespoons carrot, onion, cdlery, chopped

 

½ glass white wine, dry

1 – 2 cups hot water

Vegetable stock powder to taste

 

 

STEP 1: MAKE THE FILLING

In a large bowl combine the ground meat, the sausages, the egg, breadcrumbs, Parmesan cheese and parsley. Add salt, pepper and nutmeg.  Knead by hand until uniform.

 

STEP 2: FILL THE CHICKEN

You have two solutions:

  • you can ask you butcher’s to clean and beat the chicken breast;
  • you can slice the chicken breast on your own cutting three layers to get large slices.

Anyway you’llget such a “chicken square”.

Place a clingfilm sheet on the pastryboard; place chicken on it to make a rectangle and put another clingfilm sheet on it.

Beat with the meat mallet, then remove the clingfilm  and spread the filling previously prepared on the chicken.

Now roll the chicken and close it well with kitchen string. Finally sprinkle with all-purpose flour.

 

STEP 3: MAKE THE SAUTè

In a pan, let sautè vegetables in oil and butter until golden.

 

STEP 4: COOK THE ROLL

Add the roll to the pan, simmer with white wine until reduced, then cook on low heat for about 45 minutes adding 1 or 2 cups hot water and vegetable stock powder to taste.

A PIECE OF ADICE: It’s better if you prepare the chicken roll in advance so to better slice it when cold.
