Zucchini and provola cheese bites

After-holidays “detox diet” outdated?

I would say yes. It’s hard enough without Christmas lights, gifts and decorations, so we don’t need another sacrifice with a self-inflict strict diet … Do you agree?

I’m sure you do! it’s time to feel better with a very fast and delicious recipe: zucchini and provola fried bites!

MAKES 15 “PANZEROTTI” (BITES)
READY IN 10′

 

INGREDIENTS:

1 zucchini

2,5 oz smoked provola cheese

1 tablespoon Parmigiano cheese

Salt and pepper to taste

1 teaspoon extra virgin olive oil

1 ideal for frying pastry sheet (I used Stuffer)

frying oil to taste

 

STEP 1: MAKE THE STUFFING

Grate the zucchini and provola cheese. Place them in a bowl and add Parmigiano, pepper, salt and oil.

 

STEP 2: SHAPE THE BITES

Unroll the dough keeping it on the paper supplied. Using a glass or a cookie cutter, make 15 circles.

Place a teaspoon of stuffing in the middle of each circle,

then close it half-moon by pressing the outer edge with your fingers to avoid unpleasant spills during cooking.

 

STEP 3: FRY

Fry the stuffed bites in deep hot oil until golden brown on both sides.
