Potato, yogurt and rocket salad (VEGAN)

Potato, yogurt and rocket salad is a practical idea, fresh and easy to take with you.

That’s a healthy and complete meal, which satisfies without weighing down.

Well: if you don’t have plans, it’s fine for home lunches too 😉

 

SERVES 4 PEOPLE
READY IN 5′ (+ potato cooking time)

 

INGREDIENTS:

5 – 6 potatoes

water to taste

 

3,5 oz fresh rocket

 

5,3 oz yogurt

1/2 lemon juice

pepper and salt to taste

1 teaspoon extra virgin olive oil

 

 

STEP 1: BOIL THE POTATOES

Boil unpeeled potatoes in water for about 30 min. Then drain and peel them (if you want you can do it the night before: cold potatoes are easier to peel).

Now cut into cubes.

 

STEP 2: CHOP THE ROCKET

Wash the rocket, then cut it thinly using a knife.

 

MAKE THE DRESSING:

Place in a bowl: rocket, yogurt, lemon juice, oil, salt and pepper.

Mix,

add potatoes and taste!

A PIECE OF ADVICE: add color to your salad with cherry tomatoes.
