Apple juice ring-shaped cake (from my Trentino!)

What do you do when you suddenly feel like apple pie but you’ve already eaten that delicious food? 

First you despair, I know… but then you realize that you have a bottle of Trentino apple juice in the pantry, and that’s it!

A fragrant and soft cake, a variant of sloppina, ideal for breakfast!

 

MAKES 22 CM CAKE PAN
READY IN 50’

 

 

INGREDIENTS:

4 eggs

10,2 oz sugar

 

1 lemon zest, grated

5,6 oz corn oil

 

5,6 oz apple juice

 

9,5 oz flour

2,2 oz potato starch

1 teaspoon baking powder

pinch salt

 

 

 

STEP 1: BEAT THE EGGS

With the help of a food processor or an electric whisk, beat eggs with sugar. It will take about 8-10 minutes to get a frothy mixture.

 

STEP 2: ADD LEMON AND OIL

Now add grated lemon zest and the slowly oil while whipping

 

STEP 3: ADD THE APPLE JUICE

Now add the apple juice to the mixture.

 

STEP 4: FINALLY ADD DRY INGREDIENTS

Continue by adding sifted flour, potato starch, baking powder and a pinch of salt.

You’ll get a velvety cream.

 

 

STEP 5: COOK

Place the mixture to a greased and floured baking pan and bake in a preheated oven at 175 ° C for approx. 40 minutes.
