Olive and achovy pizza – so called Andrea’s pizza

Nice pizza today! and not just any one, the one that takes its name from Andrea Doria, fifteenth-century admiral of the Republic of Genoa!

It is a typical recipe from Imperia, a beautiful area of ​​Liguria, made of olives, onions and anchovies.

A tasty pizza, therefore, to be enjoyed whenever you feel the need for a cuddle.

 

SERVES 4 PEOPLE
READY IN 4h 30′

 

INGREDIENTS:

1 lb all-purpose flour

½ oz salt

1 cup warm water

½ oz  brewer’s yeast  dissolved into 2 tablespoons warm water

2 tablespoons extra virgin olive oil

 

2 onions

1-2 tablespoons extra virgin olive oil

 

1 -2 cups tomato sauce

1 garlic clove

4-5 basil leaves

salt to taste

2 tablespoons olives “taggiasche”

ab. 16 anchovies

extra virgin olive oil to taste

oregano to taste

 

 

 

STEP 1: MAKE THE DOUGH

In a bowl, place the flour, the salt and ¾ cup warm water.

Mix with a fork. Add the brewer’s yeast  dissolved into 2 tablespoons warm water, the oil and the remaining water until you get a wet mixture.

 

 

STEP 2: LET IT RISE

Cover the bowl with clingfilm and let the dough rise at room temperature for 3- 4 hours.

 

 

STEP 3: COOK THE ONIONS

Slice the onions and place them in a pan with oil

cook for 5 minutes covering with a lid.

 

 

STEP 3: ROLL OUT AND FILL

Divide the dough into 4 pieces. Roll each of them out in 4 20 cm baking sheets using oil.

Spread the dough with tomato sauce, add a small piec of garlic, basil leaves and salt.

Add cooked onions, olives and anchovies

sprinkle with oil and oregano.

 

 

STEP 4: COOK

Cook small pizzas in preheated oven at 250°C for 20 minutes.
