There’s a famous advertising in Italy where a yellow dressed hungry lady ask her chauffeur, Mr. Ambrogio, how to blow her hunger and he, providentially, shows a golden chocolates pyramid.
Unfortunately when I’m hungry, nobody comes, neither Ambrogio!
So what I can make is to cook something special.
Today’s recipe is made of bites filled with mascarpone cream and apricot jam, sweet and fluffy, particularly recommended as dessert or mid-afternoon snack.
Only 45 minutes to turn these simple ingredients into a gluttony!
MAKES 10 BITES
READY IN 45’
5,2 oz sugar
5,2 oz flour
8,8 oz milk
Vanilla extract to taste
Peel of ½ lemon
3 egg yolks
2,3 oz sugar
0,7 oz corn starch
2,5 oz cream
3 tablespoons Mascarpone cheese
1 glass apple juice
1 jar apricot jam
STEP 1: MAKE THE BISCUIT BASE
Place eggs in a bowl and using the whisk whip them together with sugar until very light and fluffy (it will take about 15 minutes).
Gradually add the sifted flour, stirring gently.
Transfer the dough to a baking tray lined with parchment paper and level it giving a rectangular shape and a thickness of about 1.5 cm.
Bake the dough in a preheated oven at 180 ° C for 12-15 minutes (until golden).
Once cooked, turn it over on a rag and remove the parchment paper.
STEP 2:MAKE THE MASCARPONE CREAM
Pour milk into a brick and add vanilla and lemon peel. Turn the heat on and wait until boils.
Meanwhile, in a saucepan (off the heat), mix the egg yolks, sugar and starch with a whisk to get a smooth cream.
When the milk has reached a boil, strain it and add it to the cream of egg yolks, mixing with a whisk.
Now put the saucepan on the stove and continue stirring until it has thickened (in maximum 8-10 minutes it is ready). Keep aside until cold.
Whip cream with Mascarpone cheese and add it.
STEP 3: ASSEMBLY
Cut the biscuit base into two strips and wet the strips with apple juice.
Now spread cream on one of it and jam on the other.
Overlap the two stuffed strips
And cover with the remaining cream.
Slice the cake in 10 bites and serve.
