Radicchio rolls with sausage and potatoes

Where are you radicchio? My beloved one! 

Today no risotto, canederli or crepes (take a look on the blog!) Radicchio is the super ingredient protagonist of these delicious rolls with a tender and tasty filling based on potatoes and sausage.

 

MAKES 6-7 rolls
READY IN 40’

 

 

INGREDIENTS:

2 potatoes

 

2 sausages

1 egg

3 tablespoons Parmigiano

Salt and Pepper to taste

 

1 radicchio ball

water and coarse salt to taste

 

 

 

STEP 1:COOK THE POTATOES

Peel the potatoes and cut them into cubes. Place them in the steamer and cook until tender (alternatively you can boil them in salted water).

 

 

STEP 2:COMBINE THE INGREDIENTS

Place the potatoes in a bowl, mash them with a fork or potato masher and then add the sausages, egg, Parmigiano, salt and pepper.

Stir with a fork.

 

 

STEP 3:BOIL THE CHICORY LEAVES

Leaf radicchio, then dip in hot water for 30 seconds to make it soft.

Drain and dry on kitchen paper.

 

 

STEP 4:STUFF

Fill the center of each radicchio leaf with a spoonful of filling, then wrap to make rolls.

 

 

 

STEP 5:COOK

Heat oli and rosemary for 1 minute. Add the rolls and cook them covered with a lid for 6-7 minutes per side.
