Walnut loaves

“To make bread you should wake up very very early” – False

“To make bread you need a breadmaker” – False

“Bread is very difficult to prepare” – Absolutely false!

Now please try my recipe and let me know if i’m wrong or not 😉 😉

 

MAKES 6 LOAVES (diameter about 10 cm)

READY IN 4h 30’

 

INGREDIENTS

1 small potato, boiled and mashed

2 tablespoons semolina

2 cups all-purpose flour

½ oz yeast + 1 tablespoon lukewarm water

1 cup lukewarm water

1 pinch sugar

7 walnuts

 

3 tablespoons milk

½ oz lard

1 tablespoon extra virgin olive oil

Salt to taste

2-3 tablespoons all-purpose flour

 

All-purpose flour to taste ( for the pastryboard)

 

1 tablespoon water + 1 tablespoon oil

1 walnut crashed

 

STEP 1: KNEAD THE FIRST 6 INGREDIENTS

Place in the mixer bowl the first six ingredients (from the potato to the walnuts) and knead it for a couple of minutes.

 

STEP 2: ADD THE OTHER INGREDIENTS

Add the milk, the lard, the oil, tha salt and all-purpose flour and wisk until smooth (5-10 minutes).

 

STEP 3:LET IT RISE

Cover the bowl with some food-quality film and let it rise at room temperature for 2 hours.

 

STEP 4: PORZIONA L’IMPASTO

Place the dough on a lightly floured pastryboard and divide it into 6 round pieces (all-pupose flour can help you handle the dough).

 

STEP 5: LET IT RISE FOR A SECOND TIME

Place the raw soave on a baking sheet covered with baking paper. Brush the loaves with oil and water mix and sprinkle with crashed walnuts. Let the loaves rise for a couple of hours.

 

STEP 6: COOK THE LOAVES

_Cook the loaves in preheated oven at 200°C for 10 minutes, then turn it to 180°C and cook for more 12 -13 minutes.
