Farmer Lasagna

It will soon be Easter! so I suggest you a tasty recipe for your holiday (but also for a sunday lunch!): my creamy and no-tomato lasagna!

 

SERVES 4 PEOPLE

INGREDIENTS

1 egg

4 1/2 oz all-purpose flour

1 cup milk

Salt and parsley to taste

 

6-7 asparagus

2 carrots

water and coarse salt to taste

 

1 teaspoon onion, chopped

2 teaspoons extra virgin olive oil

7 oz groun meat (pork + beef)

1/4 glass white wine, dry

 

1/2 US quart bechamel sauce (click for the recipe)

2 tablespoons Parmesan cheese

salt and pepper to taste

 

bechamel sauce to taste

 

2 ladles bechamel sauce

1 tablespoon Parmesan cheese

butter to taste

 

 

STEP 1: MAKE THE CREPE

Whisk the eggs with all-purpose flour, milk, salt and parsley to get a thick batter  (if necessary add a little milk / all-purpose flour to make it more liquid /thicker). Place a ladle of batter in a hot frying pan and tilt the pan with a circular motion so that the batter coats the surface evenly. Cook the crepe for a couple of minutes on both sides. Do the same with the remaining batter.

 

STEP 2: COOK tTHE VEGETABLES

Peel asparagus and carrots and cook them in hot salted water for about 10-12 minutes. Drain vegetables, then cut them in cubes.

 

STEP 3: COOK THE MEAT

Sautè onion in oli until golden, then add gound meat and cook in for a couple of minutes. Simmer whit white wine until reduced.

 

STEP 4:MAKE THE FILLING

In a bowl mix together: ground meat, vegetables (save some asparagus and carrots for the decoration), bechamel sauce, Parmesan cheese, salt and pepper to taste.

 

STEP 5: PLACE IN THE ROASTING PAN

Place a ladle of bechamel sauce in the roasting pan.

Fill each crepe with a spoonful of filling, then close it in a half, and another time in a half (you’ll get a filled triangle). Do the same with each crepe, then place them in the roasting pan.

 

STEP 6: DECORE

Pour two ladles of bechamel sauce on the crepe and decor with carrots and asparagus, then put some Parmesan cheese and butter on the top.

 

STEP 7: COOK THE LASAGNA

Cook lasagna in preheated oven at 180°C for about 20 minutes.
