Easter cake

I’ve been waiting to do this for a long time!

Its name is “Torta di Pasqua” or “Pizza di Pasqua” (that is Easter cake or Easter pizza), but it has very little to do with the traditional Italian pizza. It’s a typical easter central Italy recipe,  made of genuine ingredients and with an unique cheese aroma.

 

MAKES 1 CAKE

READY IN 5h

 

INGREDIENTS

½ glass milk

½ oz brewer’s yeast, dry

½ teaspoon honey

9 oz all-purpose flour

2 eggs

3-4 oz Pecorino romano + Parmesan cheese

4 tablespoons extra virgin olive oil

Salt to taste

 

Butter and all-purpose flour to taste

Emmental cheese, cubed to taste

 

 

STEP 1: MAKE THE DOUGH

In a bowl dissolve the yeast into the milk and add the honey. Mix carefully. Add – little by little – the all-purpose flour, thent he eggs, the cheese, the oil and the salt.

Knead by hand until smooth.

 

STEP 2: LET IT REST

Cover the dough with a kitchen rag and let it rise for a couple of hours.

 

STEP 3: PLCE IN BAKING TIN

Brush the baking tin with butter, then sprinkle with flour. Place the dough in the baking tin and add Emmental cheese. Let it rise again (covered) for 1 or 2 hours.

 

STEP 4: COOK

Cook the cake in preheated oven at 160° for about 50 min – 1 hour.
