Banana and chocolate cheesecake (oreo friendly)

My dear Luca, you’ve asked for a banana recipe and I reply with an original & homemade cheesecake! If you love bananas, oreo cookies and chocolate, this is your ideal snack: a crunchy crust and a soft inside.

 

MAKES 1 CAKE (diameter 24 cm)

INGREDIENTS

11 oz chocolate cookies (I used oreo)

3 oz melted butter

1 teaspoon honey

 

2 bananas

1 teaspoon lemon juice

1 noce di burro

1 cucchiaio di zucchero

 

9 oz Mascarpone cheese (fresh cheese)

Vanilla extract to taste

2 eggs

1 teaspoon corn starch

2 tablespoons chocolate chip

 

Cocoa powder and whipped cream to taste

 

 

STEP 1: MAKE THE CRUST

Finely blend the cookies in a blender, then place them in a bowl and add melted butter and honey. Knead the mixture by hand, then place it into a cake tin (covered with baking paper). Press it well with fingers, then put it into the fridge for 30 minutes.

 

STEP 2: COOK BANANS

Cut bananas into small pieces and cook them for about 6-7 minutes in a pan with lemon juice, butter and sugar (until soft). Mash bananas with a fork and save.

 

 STEP 3: MAKE THE FILLING

In a bowl mix bananas, Mascarpone cheese, vanilla extract, eggs, corn starch, and chocolate chip.

 

STEP 3: FILL AND COOK

Remove the crust from the fridge and cover it with the filling previously prepared (on step 3). Cook the cake in preheated oven at 160 °C for about 50 minutes.

 

STEP 4: DECORE

When cold, sprinkle with cocoa powder (and if you like it decore with whipped cream), then let the cake rest into the fridge for a couple of hours before serving.

 

 

A PIECE OF ADVICE: for this recipe I suggest you ripe bananas!
