Peach and amaretti cookies pie

What do you need to make a pie? only three ingredients: pastry, peaches and amaretti cookies! Let’s prepare it!

 

MAKES 1 CAKE

INGREDIENTS

9 oz all-purpose flour

4 1/2 oz butter (cold)

1 pinch salt

4 oz confectioner’s sugar

1 egg (beaten)

vanilla extract to taste

 

All-purpose flour to taste

1 cup Amaretti cookies

5 cling peaches (1 can)

 

 

STEP 1: MAKE THE PASTRY

Put the flour, salt, butter in a mixer and mix. Now add sugar, egg and vanilla extract. Transfer the mixture on the pastry board and  knead it by hand but quickly, so that the dough doesn’t get greasy. Wrap the dough in clingfilm and put it into the fridge for 1/2 hour.

 

STEP 2: ROLL IT OUT

Remove the dough from the fridge, divide it into two pieces and roll them out using baking paper and a rolling pin. Now place one of them in a cake tin covered with baking paper.

 

STEP 3: FILL THE PIE

Fill the pie with mashed amaretti cookies and peaches.

 

STEP 4: CLOSE IT

Cover the pie with the second pastry sheet and make some holes on the surface.

 

 

STEP 3: COOK

Cook the pie in preheated oven at 180°C for about 40 minutes.

A PIECE OF ADVICE: If you love sweets you can also fill the pie with custard + amaretti cookies + peaches!
