Cheese stuffed gnocchi

I’ve always loved cheese stuffed gnocchi! My mom used to buy them at the supermarket and me and my sister used to argue to eat the last one. Here is my first try to make them by myself. I suggest you to try them: amazing!

INGREDIENTS

2 tablespoons Ricotta cheese

1 tablespoon Mascarpone cheese

1 tablespoon Gorgonzola cheese

1 tablespoon Stracchino cheese

1 tablespoon Parmesan cheese

1 egg

salt and pepper to taste

 

1 lb 8 oz potatoes ( better floury white potatoes)

7 oz all-purpose flour

1 egg, beaten

2-3 pinch salt

 

Water to taste

Coarse salt to taste

 

Tomato sauce to taste (here the recipe)

Olive spread to taste

 

 

STEP 1: MAKE THE FILLING

In a bowl mix together: cheese, egg, salt and pepper.

 

STEP 2: MAKE GNOCCHI DOUGH

Deep unpeeled potatoes in cold water and boil them for about 40 minutes. Place all-purpose flour on the pastry board, add hot mashed potatoes (peeled), beaten egg and salt. Knead quickly and add other all-purpose flour only if necessary.

 

STEP 3: FILL

Divide the dough in small pieces, roll out each of them and fill with a teaspoon of cheese filling. Now close it well and make it round by hand.

 

STEP 4: COOK

Cook gnocchi in boiling salted water for 2-3 minutes after they’ve risen the top, then drain them and mix with tomato sauce and olive spread.
