And this focaccia it’s just like that: soft and so stuffed … a real gluttony
SERVES 4 PEOPLE

INGREDIENTS:
¾ of fresh brewer’s yeast cube
8,8 oz lukewarm milk
1 teaspoon sugar
10,5 oz flour “0”
9 oz flour “00”
3,5 oz butter at room temperature
1 whole egg + 1 yolk
Salt to taste
Flour to taste
Oil to taste
5 slices ham
Cheese (like fontina or similar) to taste
1 egg yolk
1 teaspoon water
1 pinch salt
STEP 1: MAKE THE DOUGH
Melt the yeast in lukewarm milk together with sugar. Mix until completely dissolved.
Place milk, the two type of flour, butter (cubed), eggs and salt in the mixer bowl (or in a large bowl if you knead by hand).
Start the mixer until you’ll get a rather smooth ball (it will take about 10 minutes). Of course, you can also knead the ingredients by hand if you don’t have a mixer!
STEP 2: LET REST
Cover the dough bowl with cling film and let rest at room temperature for a couple of hours.
STEP 3: ROLL THE DOUGH OUT
Divide the dough into two parts.
Roll out the two pieces with a rolling pin to get two circles slightly larger than the diameter of the pan. If needed, lightly dust the pastry bord and the rolling pin with flour.
STEP 4: FILL
Place the first dough circle in a cake tin previously brushed with oil (bottom and edges).
Add ham slices
and cheese
Cover with the second dough circle
Press the two dough circles with fingers to make sure to fix them.
Now you can curl the excess of pasta to create a decoration, by pressing with fingertips.
STEP 4: LET IT RISE
Brush the surface with a mix of yolk, water and salt and let it rise at room temperature for 1 hour.
STEP 5: COOK
Bake the focaccia in a preheated oven at 180 ° C for approx. 35 minutes.
