Apple pancake with rum and raisins

How soft are the clouds? If there was a method to measure the softness, I think I would use these fluffy pancakes to describe it!

    And this is not the only merit… At the first bite their softness conquers, but then there is the delicate touch of rum that inebriates with its aroma and finally the gluttony of apples literally spoils the palate.

    Come on, every Sunday is the right occasion to cuddle the family.

 

MAKES 6 PANCAKES
READY IN 20’

 

INGREDIENTS:

2 tablespoons raisins

1 tablespoon rum + 2 tablespoons warm water

(or rum flavoring + 3 tablespoons warm water)

 

2 apples

1 tablespoon lemon juice

1 tablespoon sugar

 

2 egg whites

7 oz flour

1 teaspoon baking powder

1 oz sugar

1 pinch of salt

 

2 egg yolks

1 oz seed oil

3,5 oz apple juice (I used Leni’s)

5,3 oz milk

1 teaspoon vinegar

 

a knob butter

 

0,5 oz cornstarch

10,5 oz apple juice (I used Leni’s)

1 teaspoon lemon juice

 

 

 

STEP 1: SOAK THE RAISINS

Place rum+ water in a small bowl and dip the raisins in it.

 

 

STEP 2: COOK THE APPLES

Peel the apples and cut them into cubes, removing the core.

Cook them for 5-6 minutes in a pan with lemon juice and sugar.

 

 

 

STEP 3: MAKE THE PANCAKE DOUGH

Beat the egg whites until stiff.

In the meantime, sift the dry ingredients into a bowl (flour, yeast, sugar and a pinch of salt).

Using a whisk or a mixer, mix the wet ingredients (egg yolks, oil, apple juice, milk and vinegar).

 

Add the dry ingredients one tablespoon at a time while continuing mixing.

Now add the apples after dabbing them with kitchen paper together with raisins (previously squeezed).

Finally, add the egg whites, mixing with a spatula from top to bottom so as not to disassemble the mixture.

 

 

 

STEP 4: COOK THE PANCAKES:

Melt a knob of butter in a non-stick pan.

Spread a ladle of dough in the pan and cook it for about 2-3 minutes (you should see some bubbles appear on the surface)

Now, with the help of a spatula, turn the pancake upside down and continue cooking for 1-2 more seconds.

 

 

STEP 4: MAKE APPLE SYRUP

Place corn starch in a saucepan

add the apple juice and then the lemon juice, stirring with a whisk.

Turn the heat on (medium) and continue stirring with the whisk to make the syrup thicken. It will take about 5 minutes.

 

 

STEP 5: SERVE

Pour the syrup over the pancakes and enjoy them while still hot!
