Ham and Parmigiano meatballs

Ham and Parmigiano (not Parmesan!) meatballs recall me the last food truck festival I visited.

A 100% Emilian chef, while handing me a nest full of this yummy food, asked me with that unmistakable accent: “Are you from Modena?” I almost wanted to say yes.

How can you not to make friends in front of meatballs like this?

INGREDIENTS:

3 slices bread

 

7 oz ham

2,4 oz Parmigiano cheese

½ glass milk

1 egg

Salt pepper to taste

 

1 egg + 1 pinch of salt

Breadcrumbs to taste

1 tablespoon parsley

 

frying oil to taste

 

 

STEP 1:MAKE THE DOUGH

Put the bread slices in the blender and blend

Add ham, Parmigiano and milk

Blend to get a homogeneous mixture.

Transfer it to a bowl and add egg, pepper and just a pinch of salt.

Mix.

 

 

STEP 2: SHAPE THE MEATBALLS

Take a teaspoon of dough at a time and knead it with your hands to shape a slightly flattened nut.

Do the same with the rest of the dough.

 

 

STEP 3: BREAD

Beat egg with a pinch of salt in one bowl, while in another mix breadcrumbs with parsley.

Dip the meatballs before in the egg

and then in the flavored bread.

 

 

STEP 4: FRY

Cook the meatballs in hot oil for a couple of minutes.

Drain and the meatballs are ready!
