Apple, cinnamon and walnut double cookies

Yes, you read that right: “double” because the desire for sweets is great and only one cookie, all alone, it’s a bit sad!

Let’s give cinnamon fragrance to the kitchen: apples and walnuts are the coprotagonists of this hymn to an untimed snack!

Fragrant and intoxicating cinnamon scent: the only disadvantage is that they end up immediately!

INGREDIENTS:

2 cups all-purpose flour

1 egg

1 egg yolk

5 oz butter (cubed and cold)

5 oz sugar

1 teaspoon baking powder

1 pinch salt

1 pinch lemon zest

2 tablespoons walnuts

 

Apple jam to taste

3 tablespoons walnuts, chopped

1 tablespoon brown sugar

 

Cinnamon powder to taste.

 

Icing sugar + cinnamon to taste

 

 

 

 

STEP 1: MAKE THE CRUST

Place all-purpose flour on the pastryboard. Make a hole in the centre and place eggs into it. Start blending with a fork and gradually add all-purpose flour, sugar, cubed butter, baking powder and salt.

Knead by hand to get a ball, then wrap the dough into clingfilm and put it into the fridge for 20 minutes.

Altetnatively put all ingredients in a mixer and mix for 15-20 seconds.

 

 

 

STEP 2: SHAPE THE COOKIES

Dust the pastry board with flour.

Remove the pastry from the fridge, remove the film and with the help of a rolling pin roll it out half a centimeter.

With a cookie cutter, cut the cookies out (you can make them the size you prefer, just remember that they must be even in number otherwise they will not mate!).

Transfer the biscuits to a baking tray lined with parchment paper and spread the apple jam and chopped walnuts on half of them. Sprinkle them with brown sugar.

 

 

STEP 3: COOK THE SHORTBREAD DISCS

Bake the cookies in preheated oven at 190 ° C for about 15 minutes. They are cooked when they start to change color becoming amber.

 

 

STEP 4: STUFF THE COOKIES

Once cooled, take half of the unfilled biscuits, turn them upside down and stuff them with apple jam and a sprinkle of cinnamon.

Place chopped walnuts on top of the biscuit and enjoy with friends!

TIP: if you particularly love cinnamon, once assembled, you can sprinkle the cookies with a mix of icing sugar and cinnamon
