Chickpea soup

Oh no, this isn’t a fashionable recipe… but an easy and delicious one. It’s a traditional Italian preparation, made of healthy and tasty ingredients!

 

SERVES 4 PEOPLE
READY IN 4 h 40’

 

INGREDIENTS

1 cup dried chickpeas

Cold water to taste

 

3 tablespoons extra virgin olive oil

2 tablespoons carrot, onion, celery minced

Rosemary to taste

 

Pork rind to taste

Water to taste

 

2 potatoes, cubed

3 -4 herbs leaves, sliced

Salt to taste

3 cups hot water

 

 

STEP 1: SOAK THE CHICKPEAS

Soak the chickpeas in cold water for 3 hours.

 

STEP 2: COOK THE VEGETABLES

Place extra virgin olive oil and minced vegetables in a pan. Cook for a couple of minutes and add minced rosemary.

 

STEP 3:BOIL THE PORK RIND

Boil pork rind in boiling water for 2-3 minutes, then drain it.

 

STEP 4: ADD THE OTHER INGREDIENTS

Add the potatoes to the pan with vegetables, then sliced herbs and drained chickpeas. Mix well. Add salt to taste, hot water and pork rind. Let the soup cook for about 1,5 hours. When the chickpeas get pliables they’re cooked!
