Creamy zucchini soup

After Christmastime do we need to go on a diet or do we need to have something light and tasty? I prefer the second choise! Here the recipe for a creamy zucchini soup… homemade!

 

SERVES 4 PEOPLE
READY IN 1 h 10′

 

INGREDIENTS

2 potatoes

2 carrots

1/2 onion

1 celery stick

4 zucchini

 

2 tablespoons extra virgin olive oil

 

3-4 cups hot water

 

vegetable stock powder to taste  (here the recipe)

 

 

STEP 1: CLEAN AND CUT VEGETABLES

Peel potatoes,carrotsand onion and cut them into cubes. Wash celery and zucchini and cut them into cubes.

 

STEP 2: SAUTè

Place onion and oil in a large pan, add vegetables and sautè for 2-3 minutes.

 

STEP 3: ADD WATER

Add water and let cook on low heat for 1 hour.

 

STEP 4: ADD SALT AND BLEND

Add vegetable stock powder to taste and cook for 10 minutes, then blend the soup.

 

A PIECE OF ADVICE:  if you prefer a more liquid soup, add more hot water 😉
