The secret to making me eat meat has always been only one: the sauce. Sinking the fork in a tender chicken bite and soak it into the sauce is something that gives me a unique satisfaction. It also happens to you?
Today we’re having chicken in tomato sauce, often called “alla cacciatora” according to my home recipe, great for Sunday lunch.
SERVES 4 PEOPLE

INGREDIENTS:
1 chicken in pieces
1 US quart cold water
3 tablespoons vinegar
3 tablespoons of chopped celery, carrot and onion
3 tablespoons extra virgin olive oil
1/4 glass dry white wine
11 oz tomato sauce
1 glass boiling water
2 tablespoons olives
1 large carrot
2 curls of lemon zest
2 bay leaves
Salt and pepper to taste
STEP 1: RINSE THE CHICKEN
Dip the chicken pieces in water and vinegar and let them rest for 15 minutes, then dry them with absorbent paper.
STEP 2: BROWN
Put celery, onion, carrot and oil in a pan and sauté gently. Then add the chicken pieces and brown them on all sides.
STEP 3: COOK
Simmer with white wine, then add tomato sauce, water, olives, carrot cut into large pieces and lemon zest.
Gently cook for about 45 minutes, adding the bay leaf, salt and pepper, halfway through cooking.
