Lemon & mint popsicles

Now or never: there is little, very little to the end of summer but the popsicles always have time to break a hot afternoon or, even in September!

Only a few simple ingredients: fruit, sugar and water.

Test yourself and discover your favorite flavor!

 

MAKES 6 POPSICLES
READY IN 10′ (+ FREEZING TIME)

 

INGREDIENTS:

4-5 lemons (approx. 150 g of juice)

 

4,5 oz water

3 tablespoons sugar

 

6-7 mint leaves

 

 

 

 

STEP 1: SQUEEZE THE LEMONS

Squeeze the lemons and filter the juice with a strainer.

 

STEP 2 MAKE THE SYRUP

Place water in a saucepan, add t sugar and gently melt on low heat, stirring with a teaspoon.

 

STEP 3: MIX THE INGREDIENTS

Now that it’s cold, add the syrup to the lemon juice.

 

STEP 4: PUT INTO THE MOLDS

– If you are in a hurry go on like this:

pour the mixture into the molds adding a few mint leaves, then put in the freezer and let it freeze for at least 5 hours.

– If, on the other hand, you want to prevent mint from accumulating at the bottom, I ‘m revealing you a little trick:

Pour just a little bit of the mixture into the popsicle molds adding a few mint leaves (if the leaves are large, I recommend you to cut them into strips).

Put in the freezer for approx. 1 hour.

Take out the popsicle molds another time and completely fill dipping the stick too.

Put them back into the freezer and freeze (5 hours will be ready 😉)

TIP: If you don’t like mint, you can omit it and simply make juicy lemon popsicles;

if you want to try an “aperitif-style” popsicle instead, just add a little white rum to step 3… a real delight!
