Radish salad with apple juice vinaigrette

Longing for summer and holidays!

I know, this is one of your desires too!

I must say that the morning walks under the sun of the last few days, together with the comfortable breakfast at the bar, make me feel on holiday.

So, let’s also adapt food making something fresh and very quick to prepare: a delicious mixed salad with a special apple juice vinaigrette.

A delicious sweet and sour taste, an excellent alternative to fat sauces (it’s too hot outside for them!).

 

SERVES 4 PEOPLE
READY IN 5′

 

INGREDIENTS:

1 bowl lamb’s lettuce

 

2 cucumbers

1 stalk white celery

8 radishes

 

½ glass apple juice (I used Leni’s)

½ lemon (juice)

3 tablespoons olive oil

1 teaspoon chopped parsley

Salt and Pepper to taste

 

4 tablespoons steamed corn

 

 

 

STEP 1: WASH THE VEGETABLES

Wash lettuce under water and dry it.

Peel the cucumbers and slice them.

Wash and cut the celery into chunks.

Wash and cut the radishes into wedges.

 

 

STEP 2: MAKE THE VINAIGRETTE

Place apple juice, lemon juice, oil, chopped parsley, salt and pepper in a bowl and beat with a fork to get the vinaigrette.

 

 

STEP 3: SEASON

Place salad, cucumber, celery, radishes and corn in a bowl, season with the vinaigrette and mix carefully.
