Linguine with shrimps, zucchini and turmeric

SERVES 4 PEOPLE
READY IN 15’ ( 6’ preparation, 9’ cooking)

 

INGREDIENTS

3 tablespoons extra-virgin olive oil

1 teaspoon onion, chopped

2 medium zucchini, cubed

Salt to taste

15 shrimps (fresh or thawed), cleaned

1/4 glass white wine, dry

 

12 oz linguine (long pasta)

water and cooking salt to taste

 

1 tablespoon cooking cream +  pinch turmeric

 

 

STEP 1: MAKE THE SAUCE

In a skillet sauté the onion into the oil. Add the zucchini and the salt, then cook over a medium heat for about 5 minutes.

Add the shrimps and let them sauté, then simmer with white wine until reduced.

 

STEP 2: COOK LINGUINE

In boiling salted water (the correct ratio provides 1 liter of water per pound of pasta and 12 g of salt per liter of water), cook the linguine (about 9 minutes). Just before drainig them, pick up half a cup of cooking water and keep it aside.

 

STEP 3: MIX SAUCE AND PASTA

Place the linguine into the sauce skillet and mix gently adding  the mixture of cooking cream +turmeric (and cooking water if necessary).
