Spicy Christmas cookies

Flavour of spices flavour of… Christmas! A very easy recipe to celebrate christmastime with cinnamon and ginger aroma.

 

MAKES 18 COOKIES (diameter 8cm)

INGREDIENTS

9 oz all-purpose flour

4 ½ oz butter (cold)

1 pinch salt

4 oz confectioner’s sugar

1 egg, beaten

3 teaspoons cinnamon powder

1 teaspoon ginger powder

 

Fondant to taste

 

 

STEP 1: MIX THE INGREDIENTS

Place the first 7 ingredients in the mixer and mix for a couple of minutes.

 

STEP 2:KNEAD BY HAND

Place the dough on a pastry board and knead it quickly by hand to form a ball.

 

STEP 3: LET IT REST

Wrap the dough in food-quality film and let it rest into the fridge for 30 minutes.

 

STEP 4: CUT THE COOKIES

Roll the dough on the pastry board (lightly floured) – 5mm, and cut 18 circles with a cookie cutter. Place the cookies on a baking sheet covered with parchement paper.

 

STEP 5: COOK THE COOKIES

Cook the cookies in preheated oven at 180/190°C for 20 minutes.

 

STEP 6: DECORATE WITH FONDANT

Roll the fondant and cut it as you prefer to decorate the cookies.
