Harlequin savory pie

So colorful and funny.. it would not seem, but did you know that in ancient times Harequin was a real demon and moreover of the ranks of the dead?

    Sure! and his evil figure hovered under various names throughout northern Europe …

    It is from the Middle Ages onwards that, either to exorcise the fear of evil and / or to ridicule the pagan cults that were still widespread, that Harlequin became the joker we know while maintaining that trait of shrewdness that reminds us that – albeit with a smile – we must also fear a little …

    So beware of Harlequins you meet! If you want to exorcise them properly, try to bake this savory pie entirely dedicated to them: peppers, sausage and smoked cheese in puff pastry are waiting for you!

 

SERVES 4-5 people

INGREDIENTS:

3 bell peppers (1 green, 1 yellow, 1 red)

3 tablespoons extra virgin olive oil

3 teaspoons onion, chopped

3 pinch salt

water to taste

 

2 potatoes

water and coarse salt to taste

2 tablespoons butter

2 tablespoons Parmigiano cheese

1 egg yolk

salt and pepper to taste

 

2 puff pastry sheets, round (I used Stuffer)

3,5 oz smoked cheese

3 sausages

 

 

 

STEP 1: MAKE THE BELL PEPPER CREAM

Cook 1 pepper at a time to get three different creams: a green one, a red one and a yellow one.

Finely chop the pepper and remove the internal seeds and white parts.

Brown onion in oil for a minute.

Add chopped pepper and cook on high heat for a minute,

add a pinch salt, a couple of tablespoons of water and cover with a lid. Cook peppers until soft.

Blend peppers to get a cream.

 

Do the same with the other two peppers.

 

 

STEP 2: MAKE THE POTATO MIXTURE

Peel the potatoes and slice them. Boil the potatoes in salted hot water until soft (it will take ab. 10-15 minutes).

Press the potatoes,

add butter and Parmigiano cheese

andd finally the yolk. Season with salt and pepper and mix.

 

 

STEP 3: STUFF THE PUFF PASTRY

Place the first puff pastry sheet on parchment paper in a baking pan.

Add smoked cheese

and add chopped sausages.

Cover with the second puff pastry sheet

and press the edge.

 

Now cut off the excess dough that comes out of the pan.

 

 

 

STEP 4: ADD POTATO CREAM AND PEPPERS

Place the potato mixture prepared in step 2 in a pastry bag and draw some stripes on the puff pastry.

 

Spred the different peppers cream.

 

Decore the edge with the potato mixture.

 

 

STEP 5: COOK

Cook the savory pie in preheated oven at 220°C for 30 minutes.

A PIECE OF ADVICE: You can add some turmeric to get a more intense yellow pepper cream!
