Semolina & spinach gnocchi

Come on, it takes very little to say “I love you” for Valentine’s Day!

In Sanremo Mahmood confessed that to say “I love you” he mixed drugs and tears … I modestly combine semolina and spinach.

Well, give to each his own!

His song is simply wonderful – so much so that it is the papabile soundtrack of the most romantic day of the year – but this recipe will satisfy you just as much!

SERVES 4-5 PEOPLE
READY IN 30’

 

INGREDIENTS:

1 US quart milk

9 oz semolina

2 ½ oz butter

Salt, pepper and nutmeg to taste

2 eggs

3 oz Emmenthal cheese

 

7 oz boiled spinach

 

Seed oil to taste

Butter to taste

2 tablespoons Grana cheese

Butter to taste

 

 

 

STEP 1: MAKE THE DOUGH

Boil the milk, add the semolina little by little stirring with a wooden spoon until gets thick.

Add butter,salt, pepper and nutmeg. Mix the ingredients carefully, then remove from the heat.

While the dough is still hot add the eggs and grated Emmenthal.

 

 

 

STEP 2: ADD SPINACH

Chop spinach (or blend to get a darker color)

and add them to the mixture

 

 

 

STEP 3: POUR THE DOUGH

Brush a baking pan with seed oil, pour the two mixture into it and spread them. Let it cool for 10 minutes.

 

 

STEP 4: CUT GNOCCHI OFF

Using a cookie cutter cut gnocchi off .

Don’t waste! Press the remaining dough and cut other hearts.

 

 

STEP 5: COOK

Place gnocchi in a buttered baking tin,

 

add butter and Grana cheese and cook in preheated oven at 200°C for 15 minutes.
